A: At launch, it comes with Mizen 80mm Omni burrs (80OM). These are versatile, providing brews and espresso that are sweet, juicy, and with satisfying finish - in our experience, excellent for both espresso and filter and they are likely the only burrs you’ll need in most use cases.
The P80 also has a flexible burr mount that works with 3-pin blind-burr mount (EG-1 style) and two-screw burrs, so you have the option to experiment with other 80mm burrs if desired. That said, if you’re just starting to explore different burrs, the 64mm burrs may be a better platform, since it has wider burr availability/support and is a more cost-effective ‘playground’ for experimenting.
