Furthermore, we suggest doing a cycle without coffee. So simply pour 450 ml of pure water or even better, add a teaspoon of lemon juice or apple vinegar to the water in the tank and open the precision valve at 60- 120 drops per minute. Then, let that the water tank empties. Once you have done that, you can try again with a new extraction.
Please just consider that as per law of physics, the drip rate slows down as the water level lowers. Higher water level means more pressure than lower water level. This is not something due to the design, but inherent in cold drip brewing.
Therefore, it is ideal to check the drip rate from time to time and adjust it. If you cannot do that, we advise setting the brewing with a higher drip rate 60 drops per minute so that you have an adequate average drip rate, meaning that the drip rate will be faster at first and slower towards the end for a total of around 4 hours of extraction.
Another option is to use ice cubes, as this would allow to achieve a consistent drip rate.
Instead of pouring 450 ml of water in the specific tank, add only 10% of water and the rest (90%) of ice cubes. If you are following our brew ratio, it will be 45 ml of water and around 400 g of ice cubes. Then you can set the drip rate at 20 – 30 drops per minute. The reason behind this other method is that the amount of water Will be approximately the same because the ice will be slowly melting and thus maintaining the water level – and pressure – constant ensuring a
consistent drip-rate.
